Ingredients

  • 2 lb. ground sausage OR ground beef
  • 1/4 cup onion ....chopped
  • 1/2 cup green bell pepper ....chopped
  • 2 16-oz. cans of pinto beans
  • 1 can diced tomatoes
  • 1/2 tsp. salt
  • 8 oz. mexican cheese OR cheddar cheese....grated
  • 1 box cornbread mix (I use jiffy)

Preparation

Step 1

Preheat 375 degrees.

Mix cornbread as per package directions...set aside
Brown meat in skillet, cook til medium done, (takes about 8 minutes)
Add onion and peppers to skillet, cook another 5 minutes stirring constantly.
Drain.

To meat in skillet, add beans, tomatoes, and salt ....mix well
Pour mixture into a greased 13x9 dish. Sprinkle all cheese.
Spoon cornbread batter evenly on top of meat mixture
Bake for 20-30 minutes...or til cornbread topping done
