Gumdrop Cookies

• 1 (18.5-ounce) package yellow cake mix
• 1/3 cup vegetable oil
• 2 eggs
• 1 cup coarsely chopped gumdrops

Preparation

Step 1

Preheat oven to 350 degrees. Coat cookie sheets with cooking spray.

In large bowl, combine cake mix, oil, and eggs; beat with an electric beater 1 to 2 minutes, until well blended. With spoon, stir in chopped gumdrops and drop by teaspoonfuls 2 inches apart onto cookies sheets.

Bake 12 to 14 minutes, or until cookies are firm. Remove cookies to wire rack to cool completely.

Tip:

For even more colorful cookies, add additional chopped gumdrops to tops of cookies before baking.
