Elaine's Kidney Bean Salad

I usually make potato salad but recently have been making sweet-n-sour kidney bean salad as well. You've got to try this as it is so amazingly refreshing. It is simple and needs to be refrigerated overnight to enhance the flavor. - Elaine

Ingredients
- For the dressing:
- 3 cans dark red kidney beans
- Chopped celery
- Finely chopped onion
- Finely chopped pepper
- ...................
- 3/4 cup vinegar
- 1/2 cup oil (not olive, I use Crisco oil)
- 1/2 cup sugar
- 1 Tbsp fresh parsley or 1 tsp. dried
- 1/4 tsp. pepper
- .................
- Mix with wire whisk and add to bean mixture.

This is so good, Nancy, you've just have to try it!!! I mentioned Joan of Arc only because I know that they are firm and will not turn to moosh when mixed. Maybe you have another brand there that is comparable.
