Ingredients
- 2 T olive oil
- 1 lb boneless skinless chicken, cut in bitesize pieces
- 1/4 t salt
- 1/8 t pepper
- 1/12 c mild slasa
- 1 16-oz can black beans, rinsed & drained
- 1 1/2 t ground cumin
- 2 medium zucchini, trimmed & sliced into 1/4" moons
- 1 clove garlic, minced
- 1 lb pasta, cooked & drained
Preparation
Step 1
Heat oil in skillet over med-high heat. Season chicken with salt/pepper. Add to skilleet & cook til lightly browned.
Stir in salsa, beans and cumin. Simmer covered for 10 minutes. Add zucchini and garlic, simmer 5 min more. Toss with pasta; serve immediately.
