Pasta Cubana

Ingredients

  • 2 T olive oil
  • 1 lb boneless skinless chicken, cut in bitesize pieces
  • 1/4 t salt
  • 1/8 t pepper
  • 1/12 c mild slasa
  • 1 16-oz can black beans, rinsed & drained
  • 1 1/2 t ground cumin
  • 2 medium zucchini, trimmed & sliced into 1/4" moons
  • 1 clove garlic, minced
  • 1 lb pasta, cooked & drained

Preparation

Step 1

Heat oil in skillet over med-high heat. Season chicken with salt/pepper. Add to skilleet & cook til lightly browned.
Stir in salsa, beans and cumin. Simmer covered for 10 minutes. Add zucchini and garlic, simmer 5 min more. Toss with pasta; serve immediately.
