Ingredients

  • 1 teaspoon vegetable oil, plus more for grill
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 3 tablespoons cider vinegar
  • 3/4 cup ketchup
  • 2 tablespoons pickle relish
  • 2 teaspoons spicy brown mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon molasses
  • 2 teaspoons hot sauce
  • ...........................................
  • 3 1/2 pounds meaty chicken pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

1. Lightly brush grill rack with vegetable oil. Heat gas grill to medium-low heat.

2. Saute onion and garlic in oil in skillet until softened, 5 minutes. Mix onion, garlic, vinegar, ketchup, pickle relish, mustard, Worcestershire, molasses and hot sauce in a small bowl. Season chicken with salt and pepper.

3. Grill chicken, uncovered, directly over flame for 5 minutes, until browned. Turn over; spoon sauce on chicken. Grill 5 minutes. Turn over; spoon on more sauce. Move to cooler side of grate. Cover grill. Grill 10 minutes. Spoon on sauce. Turn every 5 to 10 minutes, until internal temperature registers 165 degrees F, about 50 minutes more. Do not spoon on sauce during last 10 minutes.
