Ingredients
- Garnish:
- 2 Large Spanish Onions
- 2 Jalapenos
- 2 Clove Garlic
- 1 16oz Bag Black Beans
- 6 Cups Water
- 2 Knorr chicken boullion cubes
- 2 tsp Cumin
- 2 tsp Coriander
- Fresh Cilantro
- Minced red onion
- Sour cream
- Rice

Preparation
Step 1
1. Pour dry beans on papertowel and remove any rocks. Place in large bowl and fill with water. Let soak at least 3 hours.
2. Rinse beans in cold water,drain and add beans, water, onion, garlic, bouillion, cumin, and corriander to pot. Cover and bring to a boil. Reduce heat to simmer and cook covered for approx 3hrs.
3. Add jalepenos and simmer 15 minutes more. Use hand blender to mix soup until smooth.
4. Garnish with cilantro, minced red onion, and sour cream.
