Ingredients

  • CAKE:
  • 2 cups AP flour
  • 1 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 t baking powder
  • 1/4 t salt
  • 2 lg, eggs
  • 1 x 16 oz. can crushed pineapple with juice
  • TOPPING:
  • 1 1/2 cups white sugar
  • 12 oz. can evaporated milk
  • 1/2 lb. butter (unsalted)
  • 1 cup toasted, chopped pecans
  • 2 cups flaked coconut
  • 1 t vanilla
  • 1/4 t salt (omit if using salted butter)

Preparation

Step 1

Preheat oven to 350 F. Grease and flour 11"x7"cake pan.
CAKE:
Mix all cake ingredients well and pour into cake pan. Bake for 30-35 min., until tester comes out clean. Have topping ready when cake is done.
TOPPING:
Combine milk, sugar and butter in saucepan. Bring to boil and cook for 10 min., stirring constantly. Add pecans, coconut, vanilla and salt, remove from heat.

When cake is removed from oven, poke with holes and pour topping over top, carefully spread evenly.
