Ingredients

  • Cake:
  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 4 eggs
  • 11 oz can mandarin oranges with juice
  • Icing:
  • 3.5 oz package vanilla instant pudding
  • 1 container 8 oz cool whip
  • 1 large can crushed pineapple, with a
  • little juice
  • 1/2 cup chopped toasted pecans,
  • optional
  • Toasted coconut for garnish
  • Marischino Cherries for garnish

Preparation

Step 1

Preheat oven to 325. Grease 2 9 inch pans. Mix all cake ingredients together till well blended. Pour into pans and bake for about 25 minutes or until done. Cool a bit and remove to cool completely.

Icing:
Mix the vanilla pudding with the crushed pineapple and juice from the can. If using stir in the pecans. Now mix gently with the cool whip. Refrigerate a bit to firm it up.

Frost betwen layers and around sides and the top. Garnish with toasted coconut and some marischino cherries if youd like.
