Pigs Pickin Cake
Delicious creamy pineapple frosting with 2 layers of a madarin orange cake.

Ingredients
- Cake:
- 1 box yellow cake mix
- 1/2 cup vegetable oil
- 4 eggs
- 11 oz can mandarin oranges with juice
- Icing:
- 3.5 oz package vanilla instant pudding
- 1 container 8 oz cool whip
- 1 large can crushed pineapple, with a
- little juice
- 1/2 cup chopped toasted pecans,
- optional
- Toasted coconut for garnish
- Marischino Cherries for garnish

Preparation
Step 1
Preheat oven to 325. Grease 2 9 inch pans. Mix all cake ingredients together till well blended. Pour into pans and bake for about 25 minutes or until done. Cool a bit and remove to cool completely.
Icing:
Mix the vanilla pudding with the crushed pineapple and juice from the can. If using stir in the pecans. Now mix gently with the cool whip. Refrigerate a bit to firm it up.
Frost betwen layers and around sides and the top. Garnish with toasted coconut and some marischino cherries if youd like.
