Quinoa for breakfast

1 cup quinoa with 1/2 cup milk, 1/2 tsp almond extract, 1 tsp honey, sliced strawberries or peaches and toasted pecans
1 cup quinoa with 1/2 cup milk, 1/2 tsp vanilla extract, 1 tsp brown sugar, handful of blueberries and toasted almond slivers
1/2 cup quinoa with 1/2 cup greek yogurt, 1 tsp honey or maple syrup, pinch of lemon zest, and handful of raspberries
1/2 cup quinoa topped with over-easy egg, salt, and pepper (add any veggies you want!)

This week, I’ve been eating red quinoa. Try out different varieties offered at your supermarket. They are all cooked the same way, but have slightly different tastes!

Ingredients

  • 1 cup quinoa
  • 1 cup organic 2% milk
  • 1 cup water
  • pinch of salt
  • 1/4 cup 2% milk
  • 1/2 tsp almond extract
  • drizzle of honey
  • handful of strawberries
  • handful of toasted pecans

Preparation

Step 1

Combine quinoa with milk, water, and a pinch of salt. Cover, bring to a boil, reduce to a simmer, and cook for about 15 minutes (until liquid has been absorbed). Fluff with a fork. Chill in refrigerator until ready to eat.

Mix 1/2 cup cooked quinoa with 1/4 cup milk and almond extract and reheat until warm. Top with strawberries, honey, and pecans.
