Ingredients
- 2 tablespoons extra virgin olive oil
- 3 large cloves garlic, peeled and thinly sliced
- 1 pound medium North Carolina shrimp, peeled and deveined
- 2 tablespoons pine nuts
- 2 tablespoons golden raisins (sultana)
- 1 tablespoon capers, rinsed and drained
- pinch of crushed red pepper flakes
- 1/4 cup shrimp stock or vegetable stock
- 2 tablespoons butter
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons chopped Italian (flat leaf) parsley
- salt and pepper, to taste

Preparation
Step 1
Heat the oil in a large skillet over medium heat. Add the garlic and saute until lightly browned, about one minute. Be careful not to burn the garlic.
Add the shrimp and saute until mostly cooked through, 2-3 minutes. Add the pine nuts, raisins, capers and pepper flakes. Saute until the pine nuts turn a light golden color and the raisins begin to swell, about one minute.
Add the stock, increase the heat to medium-high, and cook until sauce is reduced by half, 3-4 minutes. Add the butter and cook, stirring, to thicken the sauce and glaze the shrimp. Stir in the lemon juice and parsley, season to taste with salt and pepper, and serve immediately.
