  • 2 yellow zucchini
  • 1 green zucchini
  • 1 - 2 tablespoons Basic Red Wine Vinaigrette
  • Salt and Pepper

Step 1

* Slice the zucchini about 1/8 - 1/4" thick on the mandolin. Place the slices on a paper towel lined plate, with additional paper towels between the layers and refrigerate until about 20 minutes before cooking. (You can even keep them overnight in the fridge as I did the first time I made this because it rained and I couldn't grill)

* Remove from the fridge 20 - 30 minutes before cooking and brush both sides of each slice with the vinaigrette and sprinkle lightly with salt and pepper.

* Grill over medium-high to high heat, turning frequently, until charred and tender.

* Serve hot or at room temperature.
