Peachy French Toast
This festive brunch dish is quick enough to serve on a busy morning. Canned peaches are purred with maple syrup then heated to create a sweet topper for the thick slices of French bread.

- 3 large eggs
- 1 cup milk
- 2 tsp vanilla extract
- 1 3/4 tsp cinnamon
- 1/8 tsp nutmeg
- Dash salt
- 8 (1 inch thick) slices French bread
- 1 (15 oz) can sliced peaches, drained
- 1/3 cup maple syrup
- 1 tbsp butter
- Confectioners' sugar (optional)

Step 1
1. Preheat oven to 200°F. In medium bowl, combine eggs, milk, vanilla, cinnamon, nutmeg and salt. Arrange bread in single layer in shallow baking dish. Pour egg mixture over bread. Let stand 5 minutes; turn bread over; let stand an additional 5 minutes.
2. Meanwhile, set wire rack on baking sheet; set aside. In blender, combine peach slices and maple syrup until smooth. Place in small saucepan and heat through.
3. Heat griddle or large skillet over medium heat. Add 1/2 tbsp butter. Cook half French bread, until golden, about 3 minutes per side. Place cooked French toast on wire rack and place in oven to keep warm. Repeat with remaining butter and bread.
4. Pour peach purge In small serving pitcher. Place toast from rack and skillet on large platter. Dust toast with confectioners' sugar if desired; serve with peach puree.
