Mashed Potatoes with toasted garlic and smoked paprika

Ingredients
- 3 lbs russet potatoes
- 4 cloves garlic, thinly sliced
- 1/4 c olive oil
- 3/4 c whole milk
- 1 stick unsalted butter
- 1/2 t smoked paprika
- salt and pepper

Step 1
Cut potatoes (peeled if desired) into 2-in chunks and place in a large pot with 1 t kosher salt and enough cold water to cover. Bring to a boil, then reduce heat and simmer until potatoes are tender, 20-25 mins. Drain and return to the pot to keep them warm.
Meanwhile, cook sliced garlic in olive oil in a small skillet over med-low heat, stirring, until golden, 5-8 mins.
Mash the potatoes with milk and butter; season with salt and pepper. Top with the garlic mixture and paprika and serve.
