Ingredients
- Marinade:
- 2 red bell peppers – sliced
- 1 onion – sliced
- 1 zucchini – sliced
- 6 oz. jar of marinated artichoke hearts – plus about 1/4 of the marinade
- 1/2 cup of pitted black olives
- 1 tablespoon of capers – plus a little of the caper juice
- Juice of 1 lemon
- Juice of 1 lime
- 1/4 cup of vinegar
- 1/2 tsp. of salt
- Dashes of red pepper flakes
- 1 tablespoon of sugar

Preparation
Step 1
Place all of the vegetables in a bowl. Prepare the marinade and pour over the vegetables.
Refrigerate for at least 1 hour before serving.
Serve with a provolone cheese, blue cheese, feta cheese, gorgonzola cheese, parmesan or Romano cheese shavings.
