Ingredients

  • 6 lg baking potatoes
  • 2 tsp cooking oil
  • 1 tsp chili powder
  • several ds bottled hot pepper sauce
  • 2/3 cup canadian style bacon chopped
  • 1 med. tomato; finely chopped
  • 2 Tbs green onion; finely chopped
  • 1 cup cheddar cheese; shredded

Preparation

Step 1

Scrub potatoes, thoroughly and prick with a fork. Bake or Microwave until tender. Cool. Halve each potato lengthwise. Scoop out inside of each potatoe half, leaving 1/4 inch thick shell. Cover and chill the scooped out potato for another use. Combine cooking oil, chili powder and hot pepper sauce.. With pastry brush, brush the insides of potato shells with oil mixture. Cut the potato halves in half, lengthwise. Return to baking sheet. Sprinkle potato quarters with bacon, tomato and green onion. Top with cheese. Bake in a 450 degree oven for 10-12 minutes or till cheese is melted and potato quarters are heated thru. Serve with sour cream.
