  • 4 oz semisweet chocolate
  • 3 Tbsp orange juice
  • 1/4 tsp salt
  • 3 large eggs, separated
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground nutmeg
  • 4 medium bananas
  • 1/4 cup orange juice

Step 1

In top of a double boiler, combine chocolate, 3 Tbsp orange juice, and salt. Cook over hot water, stirring frequently, until chocolate is melted and mixture is smooth. Remove from heat.

Beat egg yolks lightly. gradually beat in chocolate mixture. Blend in vanilla and nutmeg.

In a separate bowl beat egg whites until stiff but not dry. Gently fold beaten egg whites into chocolate mixture.

Slice bananas crosswise at an angle; dip banana slices in remaining orange juice and arrange on bottom and sides of a one quart serving dish.

Pour 1/4 cup orange juice on bottom of dish. Spoon chocolate mousse in dish and refrigate untilset, about 4 hours.
