Preparation
Step 1
Prepare charcoal fire or preheat gas grill for direct grilling over medium-high heat.
Meanwhile, from 1 lime, grate 1/2 tsp. peel and squeeze 2 Tbsp. juice. Cut remaining limes into wedges and set aside. In large bowl, stir lime juice and 1/4 tsp. lime peel with beans, tomatoes, green onions, yellow pepper, jalapeno, cilantro, oil, and 1/2 tsp. salt. Set aside at room temperature. Makes about 5 cups.
In medium bowl, toss shrimp with remaining 1/4 tsp. lime peel and 1/4 tsp. salt. Place shrimp on hot grill rack (or hot flat grill topper) and grill 3 to 4 minutes, just until opaque throughout, turning shrimp once.
Stir about half of shrimp into bean salad; top with remaining shrimp. Serve with lime wedges.
