Broccoli Chicken Casserole

Ingredients
- 2 tbsp. olive oil
- 1 lb. boneless, skinless chicken breasts, cut into 1" chunks
- 1/2 onion, chopped
- 1/4 c. flour
- 1 tbsp. Dijon mustard
- 1 1/2 c. fat-free reduced sodium chicken broth
- 2 c. broccoli florets
- 1 c. instant brown rice
- 1/2 c. sliced almonds
- 1/2 c. shredded cheddar cheese

Step 1
Preheat oven to 350 degrees. Coat an 8x8" baking dish with cooking spray.
Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and onion. Cook for 7 to 10 minutes, stirring occasionally, until the chicken and onion are browned. Sprinkle the flour over the chicken mixture and cook for 1 to 2 minutes, or until browned. Stir in the mustard. Slowly add the broth, stirring constantly to make a smooth sauce. Stir in the broccoli and rice.
Transfer the mixture to the baking dish and sprinkle the almonds and cheese evenly over the top.
Cover with foil and bake for 20 minutes. Uncover and bake for 10 minutes, or until the top is golden. Let rest for 10 minutes before serving.
