Beef Stir-Fry with Carmelized Onions and Bell Peppers

Ingredients
- 1 c quinoa
- 1 ` T olive oil
- 1 c chopped yellow onion
- 3 cloves garlic, minced
- 1 each yellow, orange and green bell peppers, chopped
- 1 c chopped roasted red peppers
- 1 lb lean beef tenderloin, cut into thin strips
- 1 c low-sodium beef broth
- 1/4 c chopped fresh basil
- sea salt and fresh ground pepper to taste

Step 1
1. Cook quinoa according to package directions; set aside.
2. Meanwhile, heat oil in a wok or large skillet on med-high. Add onion and garlic and cook 2-3 mins, until onions are soft. Add bell peppers and roasted peppers and cook 2 mins, until onions are golden brown. Add beet and cook another 2 mins, stirring frequently. Add broth and bring to a simmer over same heat. Simmer 2 mins, until steak is cooked through. Remove from heat, stir in basil and season with salt and pepper. Serve beef mixture over quinoa.
