Ingredients

  • 3/4 cup (1-1/2 sticks) butter
  • 6 large eggs
  • 1 box (6 ounces) chicken flavored stuffing
  • 2 packages (10 ounces each) frozen chopped spinach
  • 1 cup grated parmesan cheese
  • 1/4 teaspoon black pepper

Step 1

Cut butter into 6 pieces and place in a 2 cup glass measure. Microwave on high, covered with a paper towel until melted!! Meanwhile take defrosted spinach, drain and squeeze out moisture; set aside

Break eggs into large mixing bowl and whisk till foamy. Add remaining ingredients and stir until spinach is well combined. Roll into balls about 1 ½ inches in diameter. Place balls on cookie sheet and freeze. After balls are completely frozen, store in a heavy duty zippered freezer bag and put in freezer.

When ready to bake, pre-heat oven to 350 degrees. Place frozen balls on cookie sheet and bake 12-15 minutes or until bottoms are lightly browned. The balls can also be baked before freezing. Baking time is 8-10 minutes for unfrozen balls. Remove from oven and use a spatula to transfer balls to a serving platter.

COOK'S NOTE: A standard cookie scoop will yield the exact amount of spinach mixture to make a 1-1/2 inch balls. For testing purposes, we used Stove Top brand Stuffing Mix for Chicken.
