  • 1 tbsp gelatin
  • 1/3 c plus 1/4 c cold water
  • 1 cup sugar

Step 1

In a mixing bowl, sprinkle gelatin over 1/3 c cold water. let soften, 5 minutes or more.
Heat 1/4 c water and sugar in small saucepan over medium high, stirring until sugar is dissolved. Stop stirring, clip a candy thermometer to side of pan. Boil until temp reaches 238. Swirl occasionally to prevent crystals from forming. Remove from heat, add syrup to softened gelatin in mixer bowl. Whisk by hand to cool, 1 minute. Then beat with whisk attachment on medium high until soft and glossy, 8-10 minutes. Use immediately, frosting will harden.
