Ingredients

  • 3-3 1/2 pounds chicken pieces
  • 1/2 lemon
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon rosemary leaves, crumbled
  • 1/2 cup orange juice
  • 4 to 6 medium potatoes
  • 6 to 8 small peeled carrots
  • Chopped fresh parsley, optional

Preparation

Step 1

1. Rinse chicken; pat dry. Brown chicken in skillet until golden brown.

2. Place chicken in a heavy kettle or Dutch oven with tight lid. Squeeze lemon over chicken; sprinkle with salt, pepper, and rosemary and rub over the chicken pieces. Add orange juice, 1/2 cup water, potatoes, and carrots. Bring to a boil; cover and reduce heat.

3. Simmer until chicken and vegetables are tender, about 45 minutes. Arrange chicken and vegetables on a serving dish and sprinkle with parsley, if desired.
