Ingredients
- 1 1/2 LBS red-skinned potatoes-diced
- 1/4 C diced onion
- 1 garlic clove, smashed
- 3 TBS Olive Oil
- Salt & Cayenne pepper to taste

Preparation
Step 1
Boil potatoes, onion, garlic in salted water over high heat. Cook until tender, 10-15 minutes. Drain, reserving 1 C cooking water. Return potatoes to pot over medium heat, cook briefly top evaporate excess moister. Remove from heat, add oil & cayenne pepper. Mash potatoes, add reserved water as needed if potatoes are too dry.
