Ingredients

  • 1 large Russet potato
  • 1/2 cup chopped onion
  • Non-stick cooking spray
  • Butter
  • 1 can corned beef or
  • 1 cup leftover cooked corned beef
  • 4 eggs
  • Salt and pepper, to taste

Preparation

Step 1

Microwave a large Russet baking potato until tender. Let cool. Chop potato into small chunks. You don't need to remove peel. Chop about 1/2 cup fresh onion.

Spray my cast iron skillet with cooking spray, then add a large pat of butter. Add onions and saute for a few minutes, then add the chopped up potato. Cook over medium heat until it begins to brown a bit.

Break up a can of corned beef and throw it into the skillet. Stir well. Let all brown a bit, then push to one side of the pan.

Add some butter and then cook 4 eggs. Serve the corned beef with the eggs on top. Season with salt and pepper to taste.

Serves 2

Toasted homemade bread is good with this! :)
