Sandie's Zucchini Boats

These turned out wonderful. Will be a favorite in my house and will have it often during squash season.

Ingredients
- 1 med length zucchini
- 1/4 onion (red or yellow)sliced thin
- 1 cloves of fresh garlic
- 1 T Butter
- 1 c brown rice
- jack cheese
- salt/pepper

Preparation
Step 1
1. Prepare Zucchini
Cut zucchini length wise and cut off ends and scoop out middle. I use a large spoon so I can keep the insides as whole as possible so I can chop in pieces for the filling. Make sure to salt and pepper the inside.
2. Filling
Prepare brown rice.
Meanwhile saute onion, and garlic in olive oil add
the chopped out of zucchini onion mixture, add brown rice and add back to the zucchini halves.
3. Cover with foil and bake the stuffed squash until done
4.
Top with jack cheese and bake till cheese melts
