Ingredients

  • 2 medium red peppers, seeded and quartered
  • 1 medium yellow pepper, seeded and quartered
  • 1 pound mushrooms, halved
  • 2 pounds fresh asparagus, cut into pieces
  • 1 red onion, sliced
  • 4-5 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

Step 1

1. Preheat oven to 425 degrees.
2. Coat 2 jellyroll pans lightly with cooking spray or line with non-stick aluminum foil.
3. Put all the vegetables in a large bowl. Add the olive oil, salt and pepper. You may also add any other dried herbs you want, i.e. basil, oregano, thyme. Toss to coat.
4. Spread mixture in a single layer on the pans.
5. Roast for about 20 minutes, stirring occasionally, until vegetables are lightly browned and tender.
