Ingredients
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 cup brown sugar
- 1/4 tea. nutmeg
- dash of salt
- Reserved pineapple juice plus water to equal 2 cups
- 3 cups rhubarb
- 3 cups pineapple, reserving juice
- TOPPING
- 1 cup flour
- 3/4 cup oatmeal
- 1 cup brown sugar
- 1/2 cup melted butter
- 1 tea. cinnamon
- flaked coconut

Preparation
Step 1
Melt butter in a saucepan. Stir in flour, sugar, nutmeg, and add salt. Add water and pineapple juice and cook until thickened, stirring constantly. Add rhubarb and pineapple. Remove from heat. Pour into a 9x13 pan.
Topping: mix flour, oatmeal, brown sugar, melted butter and cinnamon. Combine all ingredients and sprinkle on top.
Cook 35-40 minutes in a 400 degree oven.
