  • 1 - 6 oz (1 cup) chocolate chips
  • 3 eggs, separated
  • 1/4 cup water
  • 1/8 tsp salt
  • 1/3 cup packed brown sugar
  • Whipped cream - optional
  • Chocolate shavings - optional

Preparation

Step 1

Melt over hot (not boiling) water:
chocolate chips, remove from heat.
Add egg yolks, one at a time; beating well after each addition.

Add water, beat until smooth.
In a small bowl, combine, egg whites and salt; beat until soft peaks form.
Gradually beat in brown sugar, beat until stiff and glossy.
Gently fold in chocolate mixture.
Spoon into serving dishes.
chill several hours or until ready to serve
Garnish with whipped cream and shavings.
