Chile-glazed Chicken Wings

Ingredients
- 5 lbs. chicken wings, tips discarded, and wings cut in half at the joint
- Vegetable oil spray
- 1/2 cup sake
- 1/2 cup fresh orange juice
- 1/2 cup dark brown sugar
- 1/4 cup low-sodium soy sauce
- 2 tbsp. sesame oil
- 1 tbsp. lemongrass, finely chopped or 1 tsp. lemon zest
- 1 tbsp. finely grated ginger
- 3 large garlic cloves, finely chopped
- 1/4 tsp. crushed red pepper
- 2 tbsp. fresh lime juice

Preheat oven to 500 degrees F. Spray 2 large rimmed baking sheets with vegetable oil spray. Spread the chickens on the baking sheets and season with salt and pepper. Bake for 20 minutes or until wings are cooked through and lightly browned.
Meanwhile, in a saucepan, combine the sake, orange juice, brown sugar, soy sauce, sesame oil, lemongrass, ginger, garlic and red pepper. Boil over medium heat, stirring occasionally until the glaze is reduced to 1 cup, about 10 minutes.
Stir in the lime juice. Pour half of the blaze into a small bowl.
Preheat the broiler. Transfer the wings to a large bowl and toss with he remaining glaze. Spread the wings on one of the baking sheets and broil on the middle rack for 10 minutes, turning over until browned. Transfer to platter and serve with remaining glaze.
