Just about annihilated my American Fried Potatoes the other evening! I'm sure you've made this as well where you heat a large pan with oil and butter, saute a bit of onion and garlic and then add slice potatoes and get them real crisp on the bottom and then just let them cook for 15 minutes???? Crisping and caramelizing the bottoms takes quite a long time so I didn't pay much attention to the pan but when I went to check on them a few minutes later, they were almost burned.
