Ingredients

  • 1 flat chuck roast, 3-4 lbs
  • 2 Tablespoon vegetable oil
  • Flour
  • Salt and pepper
  • Kitchen Bouquet (or other gravy flavoring product)
  • Onion slices
  • Potatoes and carrots

Preparation

Step 1

Coat the roast with flour and brown it on all sides in the oil. Season with salt and pepper and brush the roast on all sides with Kitchen Bouquet. Now, put the roast in a shallow roasting pan and top it with the onion slices. Add 1 cup of water. COVER TIGHTLY WITH FOIL and roast in a 325 degree oven for 2 hours.

Remove from oven and add cut up potatoes, carrots and more onions, if desired. Cover tightly again and roast for 1 hour more.

I make a nice gravy for this roast by putting 2 heaping tablespoons of flour in a small applesauce jar (empty and clean, of course!) and adding water almost to the top of the jar. Shake well - shaking mashed practically every lump. Add this mixture to the cooled pan juices and stir over heat until thick and bubbly, about 5-8 minutes.
