Ingredients

  • Dough:
  • 1 c butter
  • 1 c white sugar
  • 1 c brown sugar
  • 1 t baking soda
  • 3 eggs, beaten
  • 1 t vanilla
  • 4 c sifted flour
  • 1/2 t salt
  • Date filling:
  • 1/2 lb dates
  • 1/2 c water
  • 1 c nutmeats
  • 1/2 c sugar

Preparation

Step 1

Mix dough ingredients together and divide into 2 balls. Chill overnight.

Mix filling ingredients and chill while rolling out dough. Roll one ball into a rectangle shape, a little less than 1/2 in thick. Spread half the filling onto the dough, leaving room around the edge (about 1/2 - 1 inch) so filling doesn't spill out. Roll up the long way and wrap in saran wrap. Chill again overnight. Repeat with second ball of dough.

Remove saran wrap from rolls and slice into 1/2-in cookies. Bake 12-14 minutes at 375. Remove cookies to wire rack to cool.

Makes about 4 dozen.
