Ingredients

  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup ripe mashed bananas
  • 1 cup finely shredded carrots
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt

Step 1

1. In a mixer bowl beat butter 30 seconds. Add sugar; beat until fluffy. Beat in eggs. Combine flours, soda, baking powder, cinnamon and salt in a bowl. Add dry ingredients and bananas alternately to butter mixture, beating after each addition. Fold in carrots and nuts.

2. Pour into two greased 7-1/2 x 3-3/4 x 2 inch loaf pans. Bake at 350 degrees in oven for 40 to 50 minutes. Also will make muffins. If making muffins cook for 20 minutes.
