Ingredients
- 2 teaspoons olive oil
- 4 4oz. boneless skinless chicken breasts, cut into 1 inch strips
- 4 cups (approximately 76 oz. frozen stir fry blend vegetables
- 2 tablespoons cornstarch
- 1 can (14oz.) less-sodium chicken broth
- 1/4 cup frozen orange juice concentrate
- 2 tablespoons Market Day Key West Citrus Herb
- 1/4 cup silvered almonds
- 3 cups cooked rice

Heat oil in stir-fry pan or skillet over medium high heat 1 to 2 minutes. Add chicken pieces to pan. Cook and stir 4 to 6 minutes or until centers of chicken are no longer pink. Remove from pan, keep warm. Meanwhile; prepare stir-fry blend as directed on package; set aside. Whisk together cornstarch, broth, orange juice concentrate and seasoning mix. Add to pan; bring to a simmer stirring constantly. Add cooked vegetables and chicken to pan; simmer until heated through. Sprinkle with almonds. Serve over rice.
