Ingredients
- 2 medium zucchini, thinly sliced
- 2 t olive oil
- 2 T nicoise olives, pitted and chipped
- 1 c tomato sauce
- 1/2 c grated Parmigiano-Reggiano cheese

Preparation
Step 1
1. Preheat oven to 375. Heat a heavy, wide skillet on medium. Add olive oil, then add zucchini slices in a single layer and saute until golden, 2-3 mins per side. Transfer to a plate and repeat with remaining zucchini, adding more oil as needed.
2. In a 9x5-in baking dish, layer half of zucchini and scatter with 2 T olives. Spread 1/2 c tomato sauce on top and sprinkle with 1/4 c grated cheese. Repeat second layer.
3. Bake for 20 minor until golden.
