Mango Coolers

Ingredients

  • Simple Syrup:
  • 3 c sugar
  • Cooler:
  • 1 c chopped mango, frozen until hardened
  • 3 T dark rum
  • 2 T fresh lemon juice
  • 1 T simple syrup
  • 1 1/2 c small ice cubes
  • diced mango and shredded mint for garnish

Preparation

Step 1

Simple Syrup:
Prepare a large ice-water bath and set aside. Put sugar and 1 1/2 c water in a small saucepan. Cook over med-high heat, stirring frequently until sugar is completely dissolved, about 4 mins. Transfer syrup to a med bowl and set in ice-water bath until chilled. Syrup can be refrigerated, covered, up to 2 months.

Cooler:
Mix all ingredients in a blender until smooth. Divide between two glasses and serve.
