Ingredients
- Variation 1:
- 15 phyllo cups
- 1 egg
- pinch of oregano, garlic powder, and pepper
- 1 cup finely chopped baby spinach
- 3 T crumbled feta
- Variation 2:
- 15 phyllo cups
- 1/3 cup finely chopped ham
- 1/4 cup shredded cheddar
- 1 egg
- 1 T water
- pinch of dried thyme, salt, and pepper

Preparation
Step 1
Heat oven to 400. Arrange the phyllo cups on a rimmed baking sheet. In small bowl, lightly whisk together an egg, the herbs and spices, 1 cup finely chopped baby spinach, and 3 T crumbled feta. Stir to combine. Evenly distribute the mixture among the cups, then bake until lightly browned and puffed, about 12 minutes.
Variation 2:
Heat oven to 400. Arrange the phyllo cups on a rimmed baking sheet, sprayed with cooking spray. Evenly distribute ham and cheese in cups. In measuring cup, combine egg, water, and seasonings, then distribute evenly among the cups (about 1 1/2 tsp each). Bake until lightly browned and puffed, about 10 minutes.
