Cinnamon Chip Streusel Muffins

When I saw cinnamon chips in the grocery store, I knew I needed to find some sort of recipe to use them in, so off to Pinterest I went where I saw these cinnamon muffins that were oh so similar to the boxed ones that I have been making for years and I decided it was worth a shot. Let me just tell you that my mornings have been a little bit more cheery with these babies in my life. They are so yummy that I cannot stop making them. I have even vowed not to ever make the boxed stuff again. (ya right) But seriously, these are delicious and totally worth the extra effort.

Ingredients
- Streusel Topping
- 1/3 cup brown sugar
- 1/4 cup chopped pecans
- 1/4 cup oats
- 1/2 cup flour
- 3 T cold butter*
- ..........................
- Swirl Filling
- 3 T butter melted*
- 1/2 cup brown sugar
- 1 and 1/2 T cinnamon
- ...........................
- Muffin Base
- 8 T (1 stick) butter melted*
- 3/4 cup milk **
- 2 eggs
- 1 and 3/4 cups flour
- 1/2 cup oats
- 3/4 cup sugar
- 1 T baking powder
- 1/2 t salt
- 1/4 t nutmeg
- 1 cup cinnamon chips

Preparation
Step 1
Preheat oven to 400 degrees. Line cupcake pan with liners or butter and flour.
For the streusel: In a medium bowl, combine all of the ingredients, use pastry cutter or forks to work until mixture is crumbly and butter is incorporated. Set aside.

For the swirl filling: In a small bowl, combine the ingredients and mix until smooth. Set aside.

For the muffin base: In a medium bowl, combine the melted butter, milk, and eggs, whisking until combined.
In another large bowl, combine the remain dry ingredients, mixing well.
Add the wet ingredients to the dry ingredients and mix until the batter is smooth and well combined.
Take the swirl filling and gently fold it into the muffin base batter.
Using a 1/3 cup measuring cup, scoop batter into the cupcake liners.
Sprinkle the streusel topping over each muffin.
Bake until a tester inserted into the center comes out clean. About 15-20 minutes.
Enjoy with a banana and orange juice every morning until they are gone.
