Slowcooker Roast and Red Potatoes

Slow cookers tenderize meats and vegetables with low temperatures and slow times. A roast is a tough cut of meat that benefits from this low and slow cooking method. Add red potatoes into a slow cooker when preparing a roast to infuse them with a soft, meaty flavor and to make a simple one-pot meal. You need approximately 12 hours to cook a roast and red potatoes in a slow cooker. This recipe yields 10 to 12 large servings.

- 4 lb. beef or pork chuck roast
- 1 Tablespoon salt
- 1 Tablespoon pepper
- 4 Tablespoons flour
- 1 cup warm water
- 2 lbs. red potatoes, washed

Step 1
Set the chuck roast out at room temperature for 1 hour.
Combine the salt, pepper and flour in a small bowl and blend it with your fingers. Rub the roast with the seasoning mixture.
Preheat a skillet to high and brown all sides of the seasoned chuck roast.
Pour the warm water into the slow cooker and add the red potatoes. Place the browned chuck roast onto the potatoes and cover the slow cooker.
Set the slow cooker to low and cook the roast and red potatoes for 10 to 12 hours. Serve while hot.
Refrigerate any leftovers immediately and consume them within 72 hours. You can add your favorite vegetables along with the red potatoes to customize the roast. Add your favorite meat seasonings to the salt, pepper and flour mixture.
