Ingredients
- 1 1/2 lbs. boneless skinless chicken thighs
- 1 T oil
- 10 oz frozen okra
- 1/2 pound smoked ham
- 1 1/2 cups chopped onion
- 1 1/2 cup chopped green peppers
- 2 or 3 10 ox cans cannellini beans
- 6 cups chicken broth
- 2 10 oz cans tomatoes with green chillies
- 1/2 cup brown rice
- 2 T fresh cilantro

Preparation
Step 1
1. Cut chicken into bite size pieces. Cook in oil in skillet until no longer pink
2. Run hot water over okra until pieces separate easily
3. Combine all ingredients but cilantro in slow cooker
4. Cover. Cook on Low 6-8 hours. Stir in cilantro before serving.
