Ingredients

  • 1.5 c flour
  • 1.5 c graham flour (or pulverized graham crackers)
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 sticks butter, room temp
  • 2 cups brown sugar
  • 1/4 c honey
  • 4 eggs
  • 2 tsp vanilla

Preparation

Step 1

Preheat oven to 350.
Whisk together flours, baking soda, salt and cinnamon.
Cream butter, brown sugar and honey together in mixer until light and fluffy. Add eggs one at a time, then vanilla, mixing after each. Add flour mix gradually and beat until just combined.
Scoop into cupcake pans, 3/4 full. Bake 15-18 minutes.
Can fill with marshmallow, then dip tops into ganache and pipe marshmallow on top, or omit the filling. Just before serving, use torch to brown marshmallow.
