TOMATO****Simple Spiced Marinated Tomatoes

04/07/15 - This was very good. I think it would lend itself to many applications - on top of tomato BLT soup, for instance, or tossed in a green salad. Dan will eat a bit but I don't think I'd have any trouble dealing with the leftovers. Andria and Kaleb were coming for dinner and I had a quantity of cherry tomatoes I wanted to make use of so I doubled this. This amount would be plenty, however, even with company as a side dish.

Ingredients
- 2 cups halved red, yellow, or orange cherry tomatoes
- 2 thinly sliced green onions
- 2 garlic cloves, minced
- 1/2 jalapeño pepper, thinly sliced
- 2 1/2 tablespoons white balsamic vinegar (I used half regular white balsamic and half white balsamic glaze I have kicking around)
- 1/2 tablespoon light brown sugar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon minced peeled fresh ginger
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper to taste

Preparation
Step 1
Combine first 4 ingredients in a large bowl. Combine vinegar and remaining ingredients in a small bowl; stir until blended. Pour vinegar mixture over tomato mixture, tossing to coat. Chill 1 hour.
