Cauliflower-Ham Au Gratin

Ingredients

  • 4 cups partially cooked fresh cauliflower or 2 packages (10 oz. each) frozen cauliflower, thawed and well drained
  • 1 and 1/4 cups chipped fully cooked smoked ham
  • 1 can (11 0z. ) condensed Cheddar cheese soup
  • 1/4 cup milk
  • 2/3 cup Bisquick baking mix (low fat)
  • 2 tablespoons firm margarine or butter
  • 2 tablespoons shredded Cheddar cheese
  • 1/2 teaspoon ground nutmeg

Preparation

Step 1

Preheat oven to 400.
Arrange cauliflower in ungreased rectangular baking dish, 11 x 7 x 11/2; sprinkle with ham.
Beat soup and milk with a whisk until smooth; pour over ham. Mix remaining ingredients until crumbly; sprinkle over soup mixture. Sprinkle with paprika if desired.
Bake until topping golden brown, 20 to 23 minutes.
