Ingredients

  • 4 chicken breasts, cut into cork sized pieces
  • 8 tsp flour
  • 6 TBSP olive oil
  • 8 tsp red or green curry paste
  • 8 oz salted peanuts, crushed
  • 20 tbsp light coconut milk
  • 1 pkg fresh basil leaves, ripped up

Preparation

Step 1

Put the chicken into a plastic bag with flour. Mix it all about.
In a frying pan or wok, place 2 tbsp oil. Fry half the chicken pieces over medium heat until golden brown on outside but not quite cooked through. Remove chicken from pan, heat 2 more TBSP oil and repeat with the rest of the chicken. Remove and set the chicken aside.

Add 2 TBSP oil to the pan and add the curry paste and cook for 2 minutes stirring but don't burn. Return chicken and add peanuts and coconut milk. Turn down heat to low and simmer to reduce milk by 2/3rd . throw in the basil and mix it up and serve over rice.
