- 1 cup butter
- 4 egg yolks, lightly beaten
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- Pinch ground red pepper

Step 1
In a medium-size heavy saucepan, melt butter over very low heat. Before butter melts completely, whisk in egg yolks and lemon juice. Cook, whisking constantly, for 5 mins. or until slightly thickened. Add salt and ground red pepper, whisking well.
