Ingredients

  • 4 (4-oz.) skinless salmon fillets, 3/4" thick
  • 1/3 cup coarsely chopped fresh oregano
  • 1/3 cup coarsely chopped fresh cilantro
  • 1/4 cup sliced green onion
  • 1 clove garlic
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil
  • 1/8 teaspoon black pepper

Preparation

Step 1

Preheat indoor or outdoor grill. Rinse fish and pat dry with paper towels; set aside. In the bowl of a food processor or in a blender container, place remaining ingredients; cover and process until chopped. Generously coat both sides of salmon with the herb mixture. Cook salmon on the rack of an uncovered grill directly over medium-high heat for 6 to 8 minutes or until it just begins to flake easily when tested with a fork.

SERVING SUGGESTION: Steamed red skinned potatoes and steamed OR roasted asparagus.
