My mother's cobbler recipe which I think is one of summer's best treats!

Ingredients

  • 4 cups sliced peaches
  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • 1 cup all-purpose flour
  • 1 Tbsp. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. shortening
  • 1/3-1/2 cup milk

Preparation

Step 1

1. Combine peaches, cup of sugar and cornstarch.

2. Cook over medium heat until mixture thickens.

3. Pour peach mixture into greased 2-quart baking dish.

4. Dot with butter; sprinkle cinnamon & nutmeg over top of the peach filling.

5. Combine remaining dry ingredients; cut shortening into dry ingredients.

6. Stir in milk to make a soft dough. Knead slightly on a floured surface.

7. Pat or roll out dough to fit top of baking dish.

8. Bake cobbler at 400 degrees F. for 15-20 minutes or until top is browned.

Note: Recipe can be doubled or tripled and is best served warm out of the oven with a scoop of high quality vanilla ice cream.
