Ingredients
- 1 green tomato
- 1 cup panko breadcrumbs
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. chives
- 1 cup flour
- 2 eggs, whisked
- oil for frying
Preparation
Step 1
Cut your tomato into thick slices.
In a bowl, combine the breadcrumbs and spices. In another bowl, place the flour. In a third, whisk your two eggs together. Set up an assembly line of sorts. Start with flour, egg then breadcrumbs. Dunk the tomato slices in flour, then egg, then breadcrumbs. Be sure to coat them well.
In a saute pan, heat up the oil over medium high. Once it is hot, place the tomato slices in.
Let the slices sit in the oil until they get to be a nice golden brown color. Flip them. Let them get golden brown on the other side then take them out of the oil and let them drain on a paper towel.
Sprinkle them with a little salt and serve.
