Ingredients

  • 1/2 lb. cooked, smoked sausage or shrimp or chicken
  • 2 Tbsp oil
  • 1 can (15 oz.) Veg-AII Cajun Mixed Vegetables with liquid
  • 11/2 cups water
  • 2 cups quick cooking rice, uncooked
  • 1/2 cup chopped green onion including green tops
  • 1/2 cup chopped fresh parsley
  • Salt, black pepper, cayenne to taste.

Preparation

Step 1

1. Cut sausage into bite-size pieces and place in large stewty pot. Saute in hot oil until well browned.
2. Add Veg-AII Cajun Mixed Vegetables with liquid and water and heat through.
3. When hot add uncooked rice; cover and simmer. Stir occasionally. (Additional water may be needed.)
4. Add green onions and parsley just before serving.
Serves 4.


Veg*AII Cajun is great as a side dish, too! Just heat and serve
