Mmm! Warm coffee cake with a sweet drizzled glaze. Apples, carrots and pineapple make glorious additions to an easy muffin mix recipe.

Ingredients
- 1 box Betty Crocker Cinnamon Streusel Muffin Mix
- 1/2 cup chopped peeled apple
- 1/2 cup shredded carrot
- 1/2 cup chopped walnuts
- 1/2 cup flaked coconut
- 1/4 cup vegetable oil
- 2 eggs
- 1 can (8 oz) crushed pineapple in juice, undrained
- 1/2 cup powdered sugar
- 1 to 2 teaspoons water

Step 1
1. Heat oven to 400°F. Grease bottom only of 8-inch square pan with shortening or cooking spray. In medium bowl, stir together Muffin Mix, apple, carrot, walnuts and coconut. In small bowl, stir together oil, eggs and pineapple; stir into muffin mixture. Spread in pan. Sprinkle with Streusel (from Muffin Mix).
2. Bake 38 to 42 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
3. In small bowl, mix powdered sugar and enough of the 1 to 2 teaspoons water until smooth and thin enough to drizzle. Drizzle over warm cake.

This recipe is excellent. Moist, tasty and easy to make. The only draw back is that it makes an 8" pan and not the larger 13 x 9.
This Glory Muffin Cake is delicious. Made it for a Bible study group. Went over very well. I forgot the drizzle for the top, delicious without. Everyone like the streusel top. I used a chopper for the carrots and that saved time and energy.I will make it again, I love it. My husband even liked it and took one to work.

This is a very moist, excellent recipe! i served this recipe to a ladies group and it was a big hit. to cut down on the slicing and chopping i used matchstix carrots that you can purchase in a bag instead of the grated. it worked really well and saved time at the last minute. i would definately make this recipe again.
Tasty snack/breakfast treat.Nutritious also. My friends loved it and asked for the recipe.

Delicious! The apples, carrots, pineapple and coconut makes it kind of healthy!! I passed on the sugar drizzle(don't need the extra sugar) and the cake tasted fine.

I have made this recipe and people LOVE it!. It is really easy and tastes as if you were in the kitchen all day.
This recipe sounds delicious, but I do not know if it can be called "easy"...peeling, chopping, and shredding are not exactly hard, but time consuming. I look for the word "easy" in all my recipes, but this one I will not try-I don't have time!
This recipe is good if you like fruity breads. It has a nice fruity taste. My son thinks it tastes to much like pineapple , however I don't taste the pineapple too much.
Easy and delicious. I baked it in a stoneware pie plate - - very pretty and fall looking. I used pecans instead of walnuts and doubled the amount so I could use half in the streusel. It got raves - - it is a definite winner! A+
